Bonnie Tees has had a long and distinguished career. After completing training in healthly cuisine at the Institute Macrobiotic in Switzerland, she taught cooking for 17 years in Montreal and took part in several projects, working as a caterer and private chef. She perfected her art at the Natural Gourmet Institute in New York and worked with renowned vegetarian chefs.
During all these years, she cherished the dream of owning her own restaurant. A dream that took shape in 2005, on Notre-Dame Street West, with the opening of her own restaurant: Bonnys. Today, the restaurant is the destination for vegetarian and organic food in Griffintown.
At first, Bonnie worked according to the principles of the macrobiotic diet, advocating balance in everything. “It was more in then than it is now, but it’s still the basis of many healthy cuisine models,” she explains. The key principle she stands by in her kitchen is the use of organic ingredients – the more local and less processed as possible.
