Carol and Michael Buchanan’s love affair with food started many years ago. The couple met while working in a restaurant in Vancouver and went on to build restaurants around the world, from Madrid and Barcelona to London and Paris. They found their way to Calgary in the 1980s with a plan to open an authentic chop house with a focus on top-notch steaks, lamb chops, pork tenderloin and a few choice seafood selections.
Buchanan’s Chop House & Whisky Bar was built in 1987 as the city was gearing up for the 1988 Olympics. Its cozy banquettes, framed vintage photos and posters give it the warm appeal of an upscale den. The restaurant was a real hit and has remained a downtown drinking and dining institution. “Food is really important to all of us,” says Carol, explaining that one of her staff members has been with the restaurant since the start and others have worked here for more than two decades.
A classic chop house always has fish, chicken, pasta and chowder on the menu, says Carol. The Buchanan’s menu features an array of such beautifully crafted chop house standards that includes thick-cut lamb chops with red pepper jelly and house-smoked, bacon-wrapped pork tenderloin. Pasta selections include linguini in Cajun cream sauce. Seafood entrees include the lobster scallop bowl with Thai red curry sauce, charbroiled sable fish served with bourbon maple marinade as well as West Coast red spring salmon. The Cajun seafood chowder is a bestseller. “We’d never be able to take it off the menu,” says Carol.
